Carrot Cake Energy Bites
(Recipe is made without gluten ingredients, vegan, dairy-free)
Recipe Yield: 20 bites
Prep Time: 10 minutes
Max Hold Time: 7 days (refrigerated)
Ingredients:
- 8 carrot sticks
- ½ sweetened, shredded coconut
- ¼ cup dried regular raisins
- 1 cup toasted walnuts
- 2 TBSP flax seeds
- 2 cups rolled oats
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- ¼ cup agave
*Toast walnuts in oven at 300 degrees on an oven tray for 5 minutes
Directions:
- Place carrots and all dry ingredients in a food processor. Pulse a few time.
- Combine vanilla extract and agave in a separate measuring cup. Add to dry mixture.
- Process until combined. (Do not puree. You want the texture of nuts and such. Once it starts sticking together, the mix is done.)
- Portion with a purple scoop or ice cream scoop, pressing firmly into the scoop. Make sure to level it off.
- Store in a lidded, labeled container in the fridge between sheets of bakery tissue.
